The “Secret Sauce” of Chef Ashok
Chef Ashok has been in the restaurant industry for over 20 years, working at some of the top restaurants across America. His goal was to open his own restaurant, and what began as a modest catering endeavor evolved into Dawat Indian Cuisine in Collegeville.
Dawat Indian Cuisine opened on Oct. 18, 2024 in the former space of Aavya Restaurant in the Redner’s Shopping Center. This is another local family-owned and operated Indian restaurant. But Dawat’s “secret sauce’ is the expertise of Chef Ashok, who learned cooking in his native Nepal. Dawat offers a sort of “Tex-Mex” version of Indian food—authentic Indian recipes specially blended for the Western palate. And the result is delicious!
Although the former Aavya Restaurant was always tastefully decorated, the Dining Room of Dawat has been refreshed in beautiful earth tones, and along with relaxing music, provides an excellent dining ambiance.
The name of the restaurant, “Dawat,” is a Hindi and Urdu word that means “feast” or “invitation.” Dawat can also refer to the act of hosting a feast in a very elaborate way.
Dawat Indian Cuisine is owned by four partners. One is Chef Ashok, and another is Dawat’s manager, Rahul Amroliwala, who came to the US to attend graduate school in 2006. He attended the University of Findlay in Ohio, and graduated with a Master’s Degree in Finance in 2008. He first got a job at Vora Inc. in Maryland as a financial analyst. Then he got married. His brother-in-law was looking for a business to buy, and Rahul first joined him in a building distribution business in Boyertown. Then he joined with Chef Ashok and two other partners to open Dawat Indian Cuisine.
Excellent Service in a Welcoming Atmosphere
As Dawat’s Manager, Rahul is responsible for the excellent welcoming front-end service of the restaurant. According to their website, “We pride ourselves on offering our customers an amazing experience, whether in-house or take out.
