We are fortunate that owner and chef Mary Mai has chosen Collegeville as the location for her first restaurant, Pho Mai: Specializing in fresh, healthy dishes packed with flavor at reasonable prices. Not only is Vietnamese food delicious, but it is also very healthy, low in fat, gluten-free and packed with vitamins and minerals. It is the perfect food to boost immune systems, aid weight loss and provide your body with energy.
About Pho Mai
Mary Mai, who grew up in Vietnam, was always interested in food. From a young age, she hung out in the kitchen helping her family’s cooks. During the Vietnam War, her father had worked for the US Government. At the war’s end when Mary was 20, the entire family was flown to resettle in the U.S. on the West Coast.
Later, Mary married, had children and ran a number of small businesses, but her first love was always cooking for her family.
Mary explains that “Vietnamese food is generally healthy due to the use of many fresh ingredients that are high in vitamins and minerals and low in fat. We grill our meat and fish, and the only sugar comes from sugar cane. We make our own Pho broth by simmering beef bones for eight hours. I also use a lot of fresh herbs.” And she adds that with all the healthy ingredients, customers always feel good after they eat.
About the Menu
Pho Mai’s menu includes summer and spring rolls, pho, bun hue (lemongrass soup with rice noodles), vermicelli noodle bowls, rice platters served with a mixed salad platter and meat, seafood or vegetarian options; and chef specials, which include filet mignon, chicken, salmon or sea bass and desserts.
Hours and More
Pho Mai is open seven days a week for lunch from 11:30 am until 4:30 pm, and for dinner from 5:30 to 9:30 pm.
On Friday and Saturday evenings until 10:30 pm.
Ursinus students can get a 10 percent discount by showing their student IDs.
